Low-carb and deliciously chewy, these protein-packed cottage cheese bagels deliver all the satisfaction of traditional bagels without derailing your keto lifestyle. The simple dough comes together in minutes using just a handful of pantry staples, and the results are so convincing that even non-keto family members request them regularly. As someone who thought giving up bread would be impossible on keto, these bagels have become my weekend breakfast ritual – perfect topped with cream cheese and smoked salmon or turned into a hearty breakfast sandwich. They freeze beautifully too, so I always make a double batch to have on hand for busy mornings!

Ingredient List

  • 5 eggs
  • 2 cups fine almond meal
  • 1 cup cottage cheese, plain
  • 4 tbsp coconut flour
  • 2 tbsp raw apple cider vinegar
  • 1 tsp sodium bicarbonate
  • 1/4 cup unsalted butter, melted
  • 2 tbsp bagel seasoning blend (or mix of black/white sesame seeds, dried minced garlic, dried onion flakes)

Cooking Time 25-30 minutes
Total Time 35-45 minutes

Step-by-Step Instructions

  1. Place all ingredients (except Everything But the Bagel seasoning) in a food processor and blend until smooth.
  2. Let mixture rest for 5 minutes to achieve proper thickness.
  3. Grease donut pan with butter or use silicone mold. Fill cavities evenly with batter and top with Everything But the Bagel seasoning.
  4. Bake at 350°F (175°C) for 25-30 minutes until golden brown.
  5. Allow bagels to cool completely in pan. If using metal pan, gently loosen edges with knife before removing. Silicone molds will release easily.
  6. Store in refrigerator for up to one week or freeze in airtight container for longer storage.
